Perfect for busy weeknights, family dinners, or casual entertaining, this recipe delivers big flavor with minimal prep and cleanup.
1 pound lean ground beef
1 cup chunky salsa
1 (10-ounce) can red enchilada sauce
8 (8-inch) tortillas (flour or corn)
1 (8-ounce) package shredded Mexican-blend cheese (about 2 cups)
Preheat Oven
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with nonstick cooking spray.
Cook the Beef
In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat, then return the beef to the skillet. Stir in the salsa and cook over medium-low heat until warmed through. Remove from heat.
Prepare the Dish
Pour about half of the enchilada sauce into the bottom of the prepared baking dish, spreading it evenly.
Fill and Roll
Warm tortillas according to package directions. Spoon about 1/4 cup of the beef mixture down the center of each tortilla and top with about 1 tablespoon of cheese. Roll each tortilla tightly and place seam-side down in the baking dish.
Top and Bake
Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining cheese. Cover tightly with aluminum foil and bake for 30–35 minutes, until hot and bubbly.
Serve
Let rest for 5 minutes before serving. Enjoy warm.
Extra Cheesy: Add an extra 1/2 cup of shredded cheese on top before baking.
Corn vs. Flour Tortillas: Corn tortillas give a more traditional flavor, while flour tortillas are softer and easier to roll.
Meal Prep Friendly: Assemble ahead of time, refrigerate, and bake when ready.
