This Air Fryer Meatloaf is juicy, flavorful, and topped with a sweet and tangy glaze that the whole family will love. Cooking meatloaf in the air fryer gives it a perfectly cooked inside with a lightly caramelized topping—all in less time than a traditional oven meatloaf. It’s simple, comforting, and perfect for an easy weeknight dinner.
Meatloaf
2 lbs ground beef
2 eggs
½ cup diced onion
¼ cup milk
¾ cup panko bread crumbs
¼ cup chopped fresh parsley
1 tablespoon Worcestershire sauce
1 teaspoon garlic salt
1 teaspoon Italian seasoning
Sauce
1 cup ketchup
½ cup brown sugar
1 tablespoon ground mustard
Make the meat mixture:
In a large bowl, stir together the eggs, panko bread crumbs, and milk. Add the ground beef, onion, parsley, Worcestershire sauce, garlic salt, and Italian seasoning. Mix until just combined—do not overmix.
Form the loaf:
Line a loaf pan with parchment paper or foil. Add the meat mixture and gently shape it into a loaf.
Start cooking:
Carefully lift the meatloaf out using the parchment and place it into the air fryer basket. Cook at 370°F (188°C) for 15 minutes.
Cover if needed:
Check the top of the meatloaf. If it’s browning too quickly, loosely cover it with a small piece of foil. Continue cooking at 370°F for another 15 minutes.
Prepare the sauce:
While the meatloaf cooks, mix together the ketchup, brown sugar, and ground mustard in a small bowl.
Add sauce:
After 30 minutes of cooking, spread half of the sauce evenly over the top of the meatloaf.
Finish cooking:
Cook for another 10–15 minutes, or until the internal temperature reaches 165°F (74°C).
Rest and serve:
Let the meatloaf rest for about 10 minutes before slicing. Serve with remaining sauce if desired.
Don’t overmix: Overworking the meat can make the meatloaf dense instead of tender.
Use parchment: This makes transferring the meatloaf much easier and prevents sticking.
Check early: Air fryer models vary, so start checking temperature a few minutes early.
Customize: Ground turkey or a beef-and-pork mix also works well.
