Meatloaf

  • 2 lbs ground beef

  • 2 eggs

  • ½ cup diced onion

  • ¼ cup milk

  • ¾ cup panko bread crumbs

  • ¼ cup chopped fresh parsley

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon garlic salt

  • 1 teaspoon Italian seasoning

Sauce

  • 1 cup ketchup

  • ½ cup brown sugar

  • 1 tablespoon ground mustard

Instructions

  • Make the meat mixture:
    In a large bowl, stir together the eggs, panko bread crumbs, and milk. Add the ground beef, onion, parsley, Worcestershire sauce, garlic salt, and Italian seasoning. Mix until just combined—do not overmix.

  • Form the loaf:
    Line a loaf pan with parchment paper or foil. Add the meat mixture and gently shape it into a loaf.

  • Start cooking:
    Carefully lift the meatloaf out using the parchment and place it into the air fryer basket. Cook at 370°F (188°C) for 15 minutes.

  • Cover if needed:
    Check the top of the meatloaf. If it’s browning too quickly, loosely cover it with a small piece of foil. Continue cooking at 370°F for another 15 minutes.

  • Prepare the sauce:
    While the meatloaf cooks, mix together the ketchup, brown sugar, and ground mustard in a small bowl.

  • Add sauce:
    After 30 minutes of cooking, spread half of the sauce evenly over the top of the meatloaf.

  • Finish cooking:
    Cook for another 10–15 minutes, or until the internal temperature reaches 165°F (74°C).

  • Rest and serve:
    Let the meatloaf rest for about 10 minutes before slicing. Serve with remaining sauce if desired.

  • Don’t overmix: Overworking the meat can make the meatloaf dense instead of tender.
