Air Fryer Scotch Eggs are a quick and satisfying meal with a crispy golden crust and a savory sausage layer wrapped around a tender egg. Made lighter in the air fryer, they’re perfect for a hearty breakfast, brunch, snack, or even a simple dinner. Easy to prepare and full of protein, this recipe delivers classic comfort with less mess and oil.

  • 6 large hard-boiled eggs, peeled

  • 1 pound ground pork sausage

  • 2 large eggs, whisked

  • 1 cup breadcrumbs (or panko for extra crunch)

Instructions

  1. Begin with hard-boiled eggs. Once cooked, peel them carefully and set aside.

  2. Divide the raw sausage into 6 equal portions. Flatten each portion into a thin patty.

  3. Place one boiled egg in the center of each sausage patty and gently wrap the sausage around the egg, sealing it completely. Repeat with all eggs.

  4. Place the whisked eggs in a shallow bowl and the breadcrumbs in another bowl.

  5. Dip each sausage-wrapped egg into the whisked egg mixture, then roll in breadcrumbs until fully coated.

  6. Lightly spray the air fryer basket with nonstick cooking spray or line it with air fryer parchment paper. Place the coated eggs in a single layer, leaving space between them.

  7. Air fry at 400°F (200°C) for 15–18 minutes, until the sausage is fully cooked and the coating is crispy and golden brown.

  8. Remove carefully and let cool slightly before serving.

Notes

  • Make sure the sausage fully seals around the egg to prevent splitting during cooking.

  • For a softer yolk, use soft-boiled eggs instead of hard-boiled.

  • Panko breadcrumbs give a crunchier texture than regular breadcrumbs.

  • Turn the eggs once halfway through cooking for even browning if needed.
