Bacon, Lettuce & Tomato Low-Carb Wraps (With Marinated Tomatoes)

These bacon, lettuce, and tomato wraps are a fresh, flavorful twist on a classic BLT. Crispy bacon, juicy marinated tomatoes, and crunchy lettuce are wrapped in a low-carb tortilla and finished with a simple “secret sauce” made from mayonnaise and tomato marinade. It’s easy to prepare, satisfying, and perfect for lunch or a light dinner.

For the Wraps

  • 4 low-carb wraps

  • ¾ cup shredded lettuce

  • 12 bacon strips, cooked until crispy and crumbled

For the Tomato Marinade

  • 3 large beefsteak tomatoes, thinly sliced

  • ¼ cup olive oil (extra virgin preferred)

  • 2 tablespoons red wine vinegar

  • Salt, to taste

  • Freshly ground black pepper, to taste

For the Secret Sauce

  • ¼ cup mayonnaise

Instructions

Step 1: Cook the Bacon

In a skillet over medium heat, cook the bacon until crispy. Transfer to a paper towel-lined plate to drain excess grease. Once cooled slightly, crumble or break into pieces.

Step 2: Prepare the Tomato Marinade

Place the sliced tomatoes in a large dish. Drizzle with olive oil and red wine vinegar, then season with salt and black pepper. Gently turn the tomatoes to coat them evenly. Let them sit while you prepare the rest of the ingredients.

Step 3: Make the Flavored Mayo

In a small bowl, add the mayonnaise. Spoon in 1 tablespoon of the tomato marinade (including some of the tomato juices) and mix well until smooth and creamy.

Step 4: Assemble the Wraps

Lay one wrap flat on a plate. Spread about 1 tablespoon of the flavored mayo evenly over the surface. Add a layer of shredded lettuce, followed by bacon and marinated tomato slices.

Step 5: Roll and Serve

Roll the wrap tightly, tucking in the sides as you go. Slice in half if desired and serve immediately.

Notes

  • Use ripe tomatoes: Beefsteak tomatoes work best for flavor and juiciness.

  • Don’t skip the marinade: It adds depth and elevates the whole wrap.

  • Drain tomatoes lightly: Too much liquid can make the wrap soggy.

  • Make it ahead: Cook the bacon and marinate tomatoes in advance for faster assembly.

  • Add crunch: If carbs aren’t a concern, sliced cucumbers or pickles are great additions.
