The Beefy Melt Burrito is everything you want in a comfort-food classic—savory seasoned beef, fluffy rice, warm nacho cheese, and melted shredded cheese all wrapped in a soft tortilla. It’s quick, filling, and perfect for busy weeknights, casual lunches, or when you’re craving bold, cheesy flavors at home.
Scale: 1x
1 lb ground beef
1 packet taco seasoning (or homemade)
¾ cup water
2 cups cooked white rice
1 cup nacho cheese sauce
1 cup shredded Mexican-blend or cheddar cheese
½ cup sour cream
4–6 large flour tortillas
Optional toppings: diced onions, jalapeños, hot sauce
Cook the Beef
In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease.
Season
Add taco seasoning and water to the beef. Stir well and simmer for 3–5 minutes until thickened and flavorful.
Warm the Fillings
Heat the cooked rice and nacho cheese sauce separately until warm.
Assemble the Burritos
Lay a tortilla flat. Add a scoop of rice, seasoned beef, nacho cheese sauce, shredded cheese, and a drizzle of sour cream. Add optional toppings if desired.
Wrap & Melt
Fold the sides in and roll tightly into a burrito. For extra meltiness, toast burritos seam-side down in a skillet for 1–2 minutes per side until golden and the cheese is melted.
Serve
Serve warm with extra sauce or salsa on the side.
Swap ground beef for ground turkey or plant-based meat if preferred.
Add refried beans for extra creaminess and protein.
For a spicy kick, mix hot sauce directly into the beef.
Burritos can be wrapped in foil and refrigerated for up to 3 days or frozen for easy meal prep
