1 package (16 oz) breakfast sausage
¼ cup all-purpose flour
2 cups milk (for gravy)
Ground black pepper, to taste
1 tablespoon olive oil (optional)
1 pre-baked pizza crust (12-inch)
Cooking spray
6 large eggs
¼ cup milk (for eggs)
1 cup shredded cheddar cheese (or more, to taste)
Crispy fried onions, for topping
Heat a large skillet over medium heat. Cook the sausage, breaking it up, until fully browned (5–7 minutes).
Drain excess grease if needed.
Sprinkle flour over the sausage and stir well to coat.
Gradually pour in the milk, stirring constantly, and cook until thickened, about 8–10 minutes.
Season generously with black pepper. Remove from heat and set aside.
Preheat the oven to 400°F (200°C).
Place the pre-baked pizza crust on a baking sheet. Brush lightly with olive oil if desired.
Spread about half of the sausage gravy evenly over the crust.
Whisk eggs with ¼ cup milk.
Lightly spray a skillet with cooking spray and heat over medium-high.
Cook eggs, stirring gently, until just set but still soft.
Spread scrambled eggs evenly over the gravy layer.
Sprinkle generously with shredded cheddar cheese.
Bake for 10–15 minutes, until the cheese is melted and bubbly and the crust is golden.
Top with crispy fried onions, slice, and serve warm.
Don’t overcook the eggs before baking—they’ll finish cooking in the oven.
Use a sturdy crust to support the rich toppings.
Extra gravy? Save it for drizzling on top when serving.
Make it spicy with hot sausage, red pepper flakes, or a dash of hot sauce
