Instructions

1️⃣ Make the Cookie Dough

  1. In a large bowl, cream softened butter and sugar using an electric mixer for 3–4 minutes until light and fluffy.

  2. Add eggs one at a time, mixing well after each addition.

  3. Stir in vanilla extract.

  4. In another bowl, whisk together flour, baking powder, baking soda, and salt.

  5. Gradually mix dry ingredients into wet ingredients until just combined. Do not overmix.

  6. Cover and refrigerate dough for at least 30 minutes.


2️⃣ Prepare the Cream Filling

  1. In a chilled bowl, combine heavy cream, powdered sugar, and vanilla.

  2. Beat with a hand mixer until stiff peaks form (about 3–5 minutes).

  3. Refrigerate until ready to use.


3️⃣ Bake the Cookies

  1. Preheat oven to 350°F (175°C).

  2. Line baking sheets with parchment paper.

  3. Scoop rounded tablespoons of dough onto baking sheets, spacing 2 inches apart.

  4. Bake for 10–12 minutes, until edges are lightly golden while centers remain soft.

  5. Cool for 5 minutes on the tray, then transfer to a wire rack to cool completely.


4️⃣ Make the Chocolate Glaze

  1. Combine chocolate chips and vegetable oil in a microwave-safe bowl.

  2. Microwave in 30-second intervals, stirring each time until smooth.

  3. Allow glaze to cool slightly before using.


5️⃣ Assemble the Cookies

  1. Spread or pipe whipped cream onto the flat side of one cookie.

  2. Top with another cookie to form a sandwich.
