This Cheeseburger Meatloaf turns a classic comfort food into a fun, flavor-packed twist inspired by everyone’s favorite burger. Juicy ground beef, tangy condiments, melted cheddar, and crispy bacon come together in one satisfying, oven-baked dish that feels both familiar and exciting.
2 pounds ground beef
1 cup breadcrumbs
¼ cup ketchup (plus more for glazing)
2 tablespoons mustard
1 tablespoon Worcestershire sauce
½ cup finely chopped onion
2 large eggs, beaten
Salt and pepper, to taste
1 cup shredded cheddar cheese
4 slices bacon, cooked and crumbled
Preheat and Prepare
Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease it.
Mix the Meatloaf
In a large bowl, combine the ground beef, breadcrumbs, ketchup, mustard, Worcestershire sauce, onion, eggs, salt, and pepper. Mix gently until just combined—avoid overmixing.
Layer the Filling
Press half of the meat mixture into the prepared loaf pan. Sprinkle the cheddar cheese and crumbled bacon evenly over the top. Cover with the remaining meat mixture and gently press down.
Glaze and Bake
Brush the top with extra ketchup. Bake for 60 minutes, or until fully cooked and nicely caramelized on top.
Rest and Serve
Let the meatloaf rest for 10 minutes before slicing. Serve warm for the best flavor and texture.
Use ground beef with a little fat (80/20) for a juicier meatloaf.
Letting the meatloaf rest helps it hold together when slicing.
For extra cheeseburger vibes, serve with mashed potatoes or oven fries.
You can swap cheddar for American or Colby-Jack cheese if preferred.
