These Cheeseburger Sliders are juicy, cheesy, and packed with classic burger flavor—everything we love about a good cheeseburger, baked into soft, pull-apart sliders. They’re perfect for parties, game day, family dinners, or meal prep because they reheat beautifully and can be made ahead with zero stress.
2 lb lean ground beef (90/10 or 93/7)
½ Tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
½ large yellow onion, finely diced
¼ cup mayonnaise
8 slices medium cheddar cheese
6 oz medium cheddar cheese, shredded (or extra sliced cheese)
24 dinner rolls (2 packs of 12)
2 Tbsp unsalted butter, melted (plus more for greasing)
1 Tbsp sesame seeds
Preheat the Oven
Preheat oven to 350°F (175°C). Generously butter the bottom of a rimmed baking sheet.
Cook the Beef
Heat olive oil in a large skillet over medium-high heat. Add diced onion and ground beef. Break up the meat with a spatula and season with salt, black pepper, and garlic powder.
Cook just until the beef is cooked through, then remove from heat.
Drain & Creamy Boost
Tilt the skillet and spoon off excess fat. Stir in the mayonnaise until evenly combined—this keeps the beef juicy and tender.
Assemble the Sliders
Slice the dinner rolls in half horizontally. Place the bottom halves on the prepared baking sheet.
Layer sliced cheddar evenly over the buns, followed by the beef mixture. Spread evenly and square off the edges. Sprinkle shredded cheddar on top.
Top & Bake
Place the top buns cut-side down over the beef. Brush tops with melted butter and sprinkle with sesame seeds.
Bake for 12–15 minutes, or until the cheese is melted and the tops are golden brown.
Serve
Slice and serve warm. Great on their own or with pickles, fries, or a simple salad.
