  • 1 lb ground beef

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 4 cups potatoes, peeled and diced

  • 4 cups chicken broth

  • 2 cups shredded cheddar cheese

  • 1 cup milk

  • 1 cup heavy cream

  • 1 tbsp olive oil

  • Salt & pepper, to taste

Instructions

1️⃣ Sauté the aromatics
Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking for 3–4 minutes until softened.

2️⃣ Brown the beef
Add ground beef and cook until no longer pink. Drain excess grease.

3️⃣ Add potatoes & broth
Stir in potatoes and chicken broth. Bring to a boil, then reduce to low and simmer for 15–20 minutes or until potatoes are fork-tender.

4️⃣ Stir in the dairy
Add milk and heavy cream, stirring gently. Heat through — do not boil.

5️⃣ Add the cheese
Gradually sprinkle in the shredded cheddar while stirring until melted and smooth.

6️⃣ Season & finish
Add salt and pepper to taste. Simmer 5–10 minutes to thicken and blend flavors.

7️⃣ Serve & enjoy
Ladle into bowls and garnish with toppings like crispy bacon, more cheddar, or sliced green onions.

Notes

  • Add veggies! Stir in diced carrots, celery, or corn for extra texture.
