For the Chicken Marinade

  • 2 boneless, skinless chicken breasts

  • 2 tbsp olive oil

  • 2 tbsp lime juice

  • 1 tbsp chipotle chili powder

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp cumin

  • Salt & pepper, to taste

For the Burritos

  • 4 large flour tortillas

  • 1 cup cooked white or brown rice

  • 1 cup black beans, drained & rinsed

  • 1 cup shredded cheddar or Monterey Jack

  • 1 cup shredded lettuce

  • ½ cup diced tomatoes

  • ½ cup corn kernels (optional)

  • ¼ cup chopped cilantro (optional)

  • ½ cup chipotle ranch dressing

Instructions

Step 1: Marinate the Chicken
Whisk marinade ingredients in a bowl.
Add chicken, coat well, and refrigerate for 20 minutes–2 hours.

Step 2: Grill the Chicken
Preheat grill or grill pan over medium-high heat.
Cook 6–8 minutes per side or until 165°F (74°C).
Let rest, then slice into strips.

Step 3: Prep Fillings
Warm tortillas until soft.
Reheat beans and rice if needed.

Step 4: Assemble
Spread 1–2 tbsp chipotle ranch onto each tortilla.
Layer rice, beans, sliced chicken, cheese, lettuce, tomatoes, and corn.
Top with cilantro for freshness.

Step 5: Wrap & Serve
Fold in sides and roll tightly.
