Cowboy Breakfast Sliders: The Ultimate Hearty Morning Sandwich for Any Occasion

Cowboy Breakfast Sliders are the ultimate hearty, flavor-packed way to start your day. These mini breakfast sandwiches are stacked with fluffy scrambled eggs, savory sausage, crispy bacon, and sharp cheddar cheese, all tucked inside soft, slightly sweet Hawaiian rolls. Brushed with rich cowboy butter and baked until golden and melty, they’re perfect for brunch gatherings, weekend breakfasts, or even breakfast-for-dinner nights.

  • 6 large eggs, scrambled

  • 8 ounces ground pork sausage, cooked

  • 6 slices thick-cut bacon, cooked and crumbled (about 1 cup)

  • 1 cup sharp cheddar cheese, shredded

  • 1 package (12-count) Hawaiian rolls

  • 1 recipe cowboy butter, melted (divided)

Instructions

  • Preheat Oven
    Preheat oven to 350°F (175°C). Lightly spray a 7×11-inch baking dish with cooking spray.

  • Prepare Rolls
    Slice the Hawaiian rolls in half horizontally without separating them. Place the bottom halves into the prepared baking dish.

  • Add Butter
    Brush about 2 tablespoons of melted cowboy butter evenly over the bottom halves.

  • Layer Fillings
    Evenly layer scrambled eggs, cooked sausage, crumbled bacon, and shredded cheddar cheese over the rolls.

  • Top & Brush
    Place the top halves of the rolls over the cheese. Brush the tops with another 2 tablespoons of melted cowboy butter.

  • Bake Covered
    Cover with aluminum foil and bake for 15 minutes, until the cheese is melted and heated through.

  • Finish Baking
    Remove foil and bake an additional 3–5 minutes, or until the tops are golden brown.

  • Serve
    Remove from oven, slice into individual sliders, and brush with remaining cowboy butter or serve it on the side for dipping.

Notes

  • Cook eggs just until softly set—they’ll finish cooking in the oven.

  • Use freshly shredded cheese for the best melt.

  • Add sliced jalapeños for a spicy kick.

  • Make ahead: Assemble, cover, refrigerate overnight, and bake fresh in the morning.
