Creamy Chicken and Rice Soup: The Ultimate Comfort Food Dinner

This Creamy Chicken and Rice Soup is warm, hearty, and comforting — perfect for a cozy night in! Tender chicken, fresh vegetables, and long-grain rice cook together in a creamy, flavorful broth that gets naturally thick from the rice. It’s easy to make, filling, and great for leftovers!

Ingredients

  • 1 ½ lb boneless, skinless chicken thighs, cut into bite-size pieces

  • 1 tsp kosher salt

  • 1 tsp Italian seasoning

  • ¼ tsp mustard powder

  • ¼ tsp paprika

  • ¼ tsp crushed chili flakes

  • 3 tbsp unsalted butter

  • 1 medium yellow onion, diced

  • 3 large carrots, peeled & diced

  • 3 celery stalks, diced

  • 4 garlic cloves, minced

  • 1 tbsp fresh thyme, chopped (or 1 tsp dried)

  • 1 tbsp fresh rosemary, chopped (or 1 tsp dried)

  • ¼ cup all-purpose flour

  • 6 cups chicken broth

  • 1 cup half and half

  • 1 tbsp soy sauce

  • 1 tbsp hot sauce

  • 1 cup long-grain white rice, uncooked

  • Salt & pepper to taste

  • Optional Garnish: Parmesan cheese, black pepper, fresh parsley

Instructions

1️⃣ Season Chicken
Place chicken in a bowl and toss with salt, Italian seasoning, mustard powder, paprika, and chili flakes. Set aside.

2️⃣ Sauté Vegetables
Heat butter in a large Dutch oven over medium heat. Add onion, carrots, and celery. Season lightly with salt. Cook 5–7 minutes, stirring occasionally, until softened.
Add garlic and cook 30 seconds.

3️⃣ Cook Chicken
Add the seasoned chicken to the pot and cook until no longer pink. Stir in thyme and rosemary.

4️⃣ Add Flour
Sprinkle flour over the mixture and stir until vegetables and chicken are coated.

5️⃣ Simmer Soup
Slowly pour in broth, half and half, soy sauce, and hot sauce while stirring.
Add rice and increase heat to bring to a gentle boil.
Reduce heat to low, cover slightly, and simmer 15–20 minutes, stirring often, until rice is tender and soup has thickened.

6️⃣ Finish & Serve
Taste and adjust seasoning with more hot sauce, salt, or pepper.
Ladle into bowls and garnish with Parmesan, black pepper, and parsley.

Notes

  • Stir regularly while the soup simmers to prevent rice from sticking.

  • If the soup becomes too thick, add extra broth or water to loosen it.

  • For easy prep, use rotisserie chicken and add after rice is cooked.

  • You can swap rice for wild rice or brown rice, but cooking time will increase.

  • For a lighter version, use milk instead of half & half.
