Creamy Crack Chicken Gnocchi is a cozy, flavorful dish that comes together fast, making it perfect for busy weeknights. Soft gnocchi, tender chicken, melty cheese, and smoky bacon all simmer in a rich, creamy sauce. It’s comforting, filling, and super satisfying — the kind of meal everyone goes back for seconds of!
3–4 boneless, skinless chicken breasts (about 1 lb), chopped into bite-sized pieces
16 oz fresh or frozen gnocchi
8 oz cream cheese
2 cups low-sodium chicken broth
4 cups fresh spinach
1 cup shredded cheddar cheese
½ cup crispy bacon bits
1 tsp garlic powder
1 tsp onion powder
Salt and pepper, to taste
1–2 tbsp oil (for sautéing)
Prep the chicken: Cut the chicken into bite-sized pieces.
Cook the chicken: Heat oil in a large skillet over medium-high heat. Add the chicken and cook for 5–7 minutes, until golden and fully cooked through.
Make the sauce: Turn heat to medium-low. Add cream cheese and chicken broth. Stir until the cream cheese melts and the sauce becomes smooth.
Add gnocchi & spinach: Stir in the gnocchi and spinach. Cover and simmer for 5–7 minutes, or until the gnocchi is tender.
Finish with cheese & bacon: Stir in cheddar cheese and bacon bits until melted and creamy.
Serve: Spoon into bowls and enjoy warm. Add extra cheese or bacon on top if you like!
If using frozen gnocchi, you don’t need to thaw it — just add a minute or two of cook time.
Want it thicker? Let it simmer uncovered for an extra 1–2 minutes.
Want it lighter? Use reduced-fat cream cheese or swap half the cream cheese for Greek yogurt (stir yogurt in at the end so it doesn’t curdle).
Add veggies: Mushrooms, peas, or sun-dried tomatoes work great.
