  • 1 medium onion, diced

  • 3 garlic cloves, minced

  • 2 cups heavy cream

  • 1 cup beef broth

  • 1 cup grated Parmesan cheese

  • 1 cup shredded mozzarella cheese

  • 2 tbsp tomato paste

  • 1 tsp Italian seasoning

  • ½ tsp red pepper flakes (optional)

  • Salt and black pepper, to taste

  • Fresh parsley or basil, chopped (for garnish)

Instructions

  • Cook the Rigatoni
    Bring a large pot of well-salted water to a boil. Cook the rigatoni according to package directions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

  • Sauté the Aromatics
    Heat olive oil in a large skillet over medium heat. Add the diced onion and cook for 3–4 minutes until softened. Add garlic and cook for 1 minute until fragrant.

  • Brown the Beef
    Add ground beef to the skillet, breaking it apart with a spatula. Cook for 6–8 minutes until fully browned. Drain excess grease if needed.

  • Build the Flavor
