2 tablespoons butter
2 lbs chicken, cut into thin strips
1 teaspoon sea salt
1 teaspoon ground black pepper
1 white onion, diced
2 tablespoons garlic, diced
½ cup chicken stock
½ cup roasted red peppers, drained and sliced
1 cup heavy cream
½ cup Parmesan cheese, shredded
1 tablespoon Italian seasoning
½ cup pepperoncini peppers, drained (sliced, rings, or whole)
In a large, heavy skillet, melt the butter over medium-high heat.
Season the chicken with salt and pepper, then add it to the pan.
Brown the chicken on all sides, turning every couple of minutes, about 8 minutes total.
The chicken does not need to be fully cooked at this stage.
Remove the chicken from the pan and set aside.
Add the diced onion and garlic to the same pan and cook for about 5 minutes, until softened and lightly golden.

Simmer until the sauce thickens and the chicken reaches an internal temperature of 165°F (74°C).
Add a splash of chicken stock if the sauce becomes too thick.
Remove from heat and serve immediately.
Adjust the heat: Pepperoncini peppers add tang without too much spice, but you can add extra for more zip.
Use freshly grated Parmesan: It melts more smoothly and creates a creamier sauce.
