  • 8 oz spaghetti or fettuccine

  • 1 cup ripe tomatoes, diced

  • 1 cup heavy cream

  • 4 cloves fresh garlic, minced

  • 2 tablespoons extra virgin olive oil

  • ¼ cup fresh basil, chopped

  • Salt and black pepper, to taste

  • Optional: grated Parmesan cheese, for serving

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.

  2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30–60 seconds, until fragrant and lightly golden.

  3. Stir in the diced tomatoes, season with salt and pepper, and simmer for about 5 minutes until slightly softened.

  4. Reduce the heat to low and pour in the heavy cream, stirring until the sauce is smooth and well combined.

  5. Add the cooked pasta to the skillet and toss until evenly coated in the creamy tomato sauce.

  6. Remove from heat and serve topped with fresh basil and optional grated Parmesan cheese.

Notes

  • Use ripe tomatoes: Fresh, ripe tomatoes give the sauce better flavor and natural sweetness.

  • Don’t overcook the garlic: Garlic burns quickly—keep the heat moderate to avoid bitterness.

  • Adjust the creaminess: Add a splash of pasta cooking water if the sauce feels too thick.
