Ingredients

Scale
  • 4 boneless pork chops (about 1 inch thick)

  • 2 tablespoons brown sugar

  • 1 teaspoon chili powder

  • 1 teaspoon dried oregano

  • 1 teaspoon Cajun seasoning

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder or granules

  • 1 tablespoon olive oil

  • Salt and black pepper, to taste

Instructions

1. Prepare the Spice Mix

In a small bowl, combine the brown sugar, chili powder, oregano, Cajun seasoning, paprika, and garlic powder. Mix well.

2. Season the Pork Chops

Pat the pork chops dry with paper towels. Season both sides with salt and pepper, then rub the spice mixture evenly over each chop.

3. Heat the Pan

Heat olive oil in a large skillet over medium-high heat until hot.

4. Cook the Pork Chops

Add the pork chops to the skillet and cook for 4–5 minutes per side, until nicely caramelized and the internal temperature reaches 145°F (63°C).

5. Rest Before Serving

Remove pork chops from the pan and let them rest for 5 minutes before serving to keep them juicy.

Notes

  • Do not skip resting time: This helps the juices redistribute for tender pork chops.

  • Use a meat thermometer: Pork is best cooked to exactly 145°F (63°C).

  • Avoid overcrowding the pan: Cook in batches if needed to ensure a proper sear.

  • Extra heat: Add a pinch of cayenne if you like more spice.

  • Serving ideas: Serve with mashed potatoes, roasted vegetables, or a fresh green salad.
