Easy Cheeseburger Soup

This Easy Cheeseburger Soup has all the flavors of a classic cheeseburger — juicy beef, sharp cheddar cheese, potatoes, and even an optional pickle topping! It’s rich, creamy, and incredibly comforting. A perfect weeknight dinner the whole family will love!

Ingredients

  • 5 slices bacon, cut into small pieces

  • 1 lb ground beef

  • ¼ cup butter

  • ¼ cup diced onion

  • 2 celery stalks, diced

  • ½ tsp minced garlic

  • 6 tbsp all-purpose flour

  • 4 cups chicken broth

  • 1 cup heavy cream

  • 1 tsp Worcestershire sauce

  • 1 lb Yukon Gold potatoes, peeled & diced small

  • 2 cups shredded sharp cheddar cheese

  • Salt & pepper, to taste

  • ¼ cup diced pickles (optional)

Instructions

1️⃣ Cook Bacon
Cook bacon in a soup pot over medium-high heat until crispy (about 10 minutes).
Transfer to a paper towel-lined plate, leaving the bacon fat in the pot.

2️⃣ Brown Beef
Add the ground beef and cook until browned, breaking it apart with a spoon.
Drain excess fat and transfer the beef to another plate.

3️⃣ Sauté Veggies
Melt butter in the same pot. Add onion and celery; cook 4–5 minutes until softened.
Stir in garlic and cook 30 seconds.

4️⃣ Thicken Base
Add flour and cook, stirring constantly for 2 minutes to remove the raw flour taste.

5️⃣ Add Broth & Cream
Slowly whisk in chicken broth until smooth.
Stir in heavy cream, Worcestershire sauce, and potatoes.
Return beef to the pot.

6️⃣ Simmer
Bring to a boil, then reduce to a gentle simmer.
Cover pot slightly ajar and cook 15–20 minutes, stirring occasionally until potatoes are tender and soup thickens.

7️⃣ Finish with Cheese
Turn off heat and gradually stir in cheddar until melted.
If too thick, add extra broth, milk, or cream.

8️⃣ Serve
Stir in most of the bacon, reserving some for topping.
Season to taste with salt and pepper.
Garnish with bacon — and diced pickles for that true cheeseburger flavor!

Notes

  • For extra flavor, use smoked cheddar or a blend of cheeses.

  • Don’t boil after adding cheese — it may separate.

  • Add a spoonful of ketchup or mustard to the bowl for a fun cheeseburger twist!

  • Leftovers will thicken — add a splash of broth when reheating.
