For the Meatballs

  • 1 lb ground beef or a mix of beef and pork

  • ½ cup breadcrumbs

  • 1 large egg

  • ¼ cup grated onion

  • 2 cloves garlic, minced

  • ½ tsp black pepper

For the Sauce & Assembly

  • 2 cups marinara sauce

  • 4 hoagie or sub rolls

  • 1½ cups shredded mozzarella cheese

  • 4 slices provolone cheese (optional)

  • ¼ cup grated Parmesan cheese

  • 1 tbsp butter (optional, for toasting rolls)

  • Fresh basil or parsley, for garnish (optional)

Instructions

  1. Prepare the meatballs
    Preheat the oven to 400°F (200°C).
    In a large bowl, combine ground meat, breadcrumbs, egg, onion, garlic, Italian seasoning, salt, and pepper. Mix gently until just combined.
    Roll into 1–1½-inch meatballs and place on a parchment-lined baking sheet.

  2. Cook the meatballs
    Bake for 18–20 minutes, or until browned and cooked through.
    Optional: Pan-fry in a skillet over medium heat, turning to brown all sides.

  3. Simmer in marinara
    Bring the marinara sauce to a gentle simmer in a large saucepan.
    Add the cooked meatballs and simmer for 10–15 minutes to blend flavors.

  4. Prepare the rolls
    Split the rolls open without cutting all the way through.
    Brush with butter if desired and toast in the oven for 3–5 minutes, until lightly crisp.

  5. Assemble the subs
    Spoon meatballs and sauce into each roll.
    Top with mozzarella and provolone cheese.
    Broil for 2–3 minutes, until cheese is melted and bubbly.

  6. Serve
