For the Cucumber Mixture
1 cup diced English cucumber
⅛ tsp salt
2 tbsp low-fat Greek yogurt
2 tbsp crumbled feta cheese
1 tbsp chopped fresh herbs (dill and/or chives)
½ tsp fresh lemon juice
¼ tsp grated lemon peel (zest)
⅛ tsp black pepper
For Assembly
4 slices whole-grain bread
2 thin slices red onion
½ cup alfalfa sprouts
Add diced cucumber and a pinch of salt to a bowl.
Let stand for 10 minutes to draw out moisture.
In a separate bowl, mix yogurt, feta, chopped herbs, lemon zest, lemon juice, and pepper.
Stir until smooth and creamy.
Drain cucumbers and pat dry with paper towels.
Add to the yogurt mixture and stir until evenly coated.
Lay sprouts evenly on two slices of bread.
