For the Cucumber Mixture

  • 1 cup diced English cucumber

  • ⅛ tsp salt

  • 2 tbsp low-fat Greek yogurt

  • 2 tbsp crumbled feta cheese

  • 1 tbsp chopped fresh herbs (dill and/or chives)

  • ½ tsp fresh lemon juice

  • ¼ tsp grated lemon peel (zest)

  • ⅛ tsp black pepper

For Assembly

  • 4 slices whole-grain bread

  • 2 thin slices red onion

  • ½ cup alfalfa sprouts

Instructions

1️⃣ Salt the Cucumbers

  • Add diced cucumber and a pinch of salt to a bowl.

  • Let stand for 10 minutes to draw out moisture.

2️⃣ Make the Yogurt Dressing

  • In a separate bowl, mix yogurt, feta, chopped herbs, lemon zest, lemon juice, and pepper.

  • Stir until smooth and creamy.

3️⃣ Combine

  • Drain cucumbers and pat dry with paper towels.

  • Add to the yogurt mixture and stir until evenly coated.

4️⃣ Build the Sandwiches

  • Lay sprouts evenly on two slices of bread.

  • Spoon cucumber mixture over the sprouts.

  • Add a slice of red onion to each.

  • Top with remaining bread slices.

5️⃣ Serve Fresh

  • Cut sandwiches in half and enjoy immediately!
