Garlic Bread Rolls are soft, fluffy homemade dinner rolls filled with rich garlic flavor and brushed with irresistible garlic herb butter fresh from the oven. These rolls are perfect as a side dish for pasta, soups, or holiday meals, and they’re guaranteed to disappear fast. While they look bakery-worthy, they’re surprisingly simple to make at home.
4 ½ tablespoons unsalted butter
2 tablespoons minced garlic
3 ½ cups + 1 tablespoon all-purpose flour
3 tablespoons fresh parsley, chopped
1 tablespoon granulated sugar
2 ¼ teaspoons instant yeast
1 teaspoon fine sea salt
1 cup whole or 2% milk, warmed to 110°F (43°C)
1 large egg, room temperature
1 beaten egg (for brushing tops)
2 tablespoons unsalted butter
1 tablespoon minced garlic
1 tablespoon fresh parsley, chopped
Flaky sea salt, for finishing (optional)
Prepare the Pan:
Lightly butter the bottom and sides of a 9×13-inch baking pan. Set aside.
Make Garlic Butter for Dough:
In a small saucepan, melt the butter and add minced garlic. Cook for 1–2 minutes until fragrant. Remove from heat and let cool slightly.
Mix the Dough:
In a stand mixer bowl, combine flour, parsley, sugar, yeast, and salt. Add the warm milk, egg, and cooled garlic butter.
Knead with a dough hook on low speed for 10–12 minutes, until the dough is smooth, soft, and slightly tacky.
If sticky, add flour 1 tablespoon at a time.
Shape the Rolls:
Divide dough into 12 equal portions (about 67 g each). Shape into smooth balls and pinch seams underneath. Place in prepared pan.
First Rise:
Cover with plastic wrap or a clean towel. Let rise in a warm place until doubled in size, about 1–2 hours.
Bake:
Preheat oven to 350°F (180°C). Brush rolls with beaten egg.
Bake for 20–30 minutes, until golden brown on top.
Make Garlic Butter Topping:
While baking, melt butter and sauté garlic for 1–2 minutes. Remove from heat and stir in parsley.
Finish & Serve:
Brush hot rolls generously with garlic butter. Sprinkle with flaky sea salt if desired. Serve warm.
Use warm milk, not hot—too much heat can kill the yeast.
