  • 4 chicken breasts

  • 2 cups baby carrots

  • 3 cloves garlic, minced

  • 2 tablespoons olive oil

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • Salt and pepper, to taste

  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven
    Preheat your oven to 400°F (200°C).

  2. Prepare the garlic herb mixture
    In a small bowl, mix the olive oil, minced garlic, thyme, rosemary, salt, and pepper until well combined.

  3. Season the chicken
    Place the chicken breasts in a baking dish and coat them evenly with the garlic herb mixture.

  4. Add the carrots
    Arrange the baby carrots around the chicken in the same dish, tossing them lightly in any remaining oil and herbs.

  5. Bake
    Bake uncovered for 25–30 minutes, or until the chicken is fully cooked (internal temperature reaches 165°F / 74°C) and the carrots are tender.

  6. Garnish and serve
    Remove from the oven and garnish with freshly chopped parsley before serving.
