2 chicken breasts, cubed
4–5 small/medium potatoes, cubed
Olive oil (for tossing potatoes)
Salt, pepper, garlic powder, paprika (for seasoning potatoes)
2 tbsp butter
½ tsp salt and ½ tsp pepper (for seasoning chicken)
1 tsp paprika
1 tsp onion powder
1 tsp Italian seasoning
2 tbsp minced garlic
Garlic Parmesan sauce (Buffalo Wild Wings or homemade, as desired)
1 cup shredded mozzarella cheese
1. Prepare the Potatoes
Wash, peel, and cube the potatoes.
Toss with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
2. Cook the Potatoes
Preheat an air fryer to 400°F (200°C).
Cook potatoes for 20 minutes, shaking the basket halfway through. Potatoes should be crispy on the outside and tender inside.
3. Season the Chicken
Cube the chicken breasts.
In a bowl, season with ½ tsp salt, ½ tsp pepper, 1 tsp paprika, 1 tsp onion powder, and 1 tsp Italian seasoning.
4. Cook the Chicken
Heat 2 tbsp butter in a skillet over medium-high heat.
Add the chicken and cook until internal temperature reaches 165°F (74°C) and fully cooked.
5. Add Garlic and Sauce
Stir in minced garlic and garlic parmesan sauce.
Cook 1–2 minutes, coating the chicken evenly.
6. Combine Potatoes and Chicken
Add the cooked potatoes to the skillet.
Toss everything together so the potatoes are coated with the sauce.
7. Melt the Cheese
Sprinkle shredded mozzarella on top.
Cover the skillet with a lid or place under a broiler for a few minutes until cheese is melted and bubbly.
Crispy potatoes: Use an air fryer or oven to ensure extra crispiness.
Cheese alternatives: Try provolone, gouda, or pepper jack for different flavors.
Make it lighter: Use less sauce or a low-fat version.
Meal prep: This dish keeps well in the fridge for up to 3 days. Reheat in a skillet or oven to maintain crispiness.
