Garlic Parmesan Chicken Meatloaf is a lighter, flavorful twist on the classic meatloaf everyone loves. Made with lean ground chicken, savory garlic, and rich Parmesan cheese, this dish is moist, tender, and packed with comforting flavor. 1 lb ground chicken
4 cloves garlic, minced
1 cup grated Parmesan cheese, divided
1 cup breadcrumbs (plain or Italian-seasoned)
2 large eggs
1 medium onion, diced
2 tablespoons soy sauce (low-sodium recommended)
1 teaspoon salt
1 teaspoon black pepper
Preheat your oven to 375°F (190°C) and lightly grease a baking dish with nonstick spray.
In a skillet over medium heat, sauté the diced onion for about 5 minutes, until soft and translucent. Remove from heat and let cool slightly.
In a large bowl, combine ground chicken, sautéed onion, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and ½ cup of the Parmesan cheese. Mix gently until just combined.
Shape the mixture into a loaf and place it in the prepared baking dish.
Sprinkle the remaining Parmesan cheese evenly over the top. Optional: add a pinch of paprika or Italian seasoning.
Bake for 45–50 minutes, or until the internal temperature reaches 165°F (74°C).
Let the meatloaf rest for 10 minutes before slicing and serving.
