This Garlic Steak Bites and Potatoes dish is a one-pan wonder—juicy, tender steak bites paired with crispy, golden potatoes tossed in buttery garlic goodness. Ready in just 40 minutes, it’s perfect for a cozy weeknight dinner or casual entertaining.
1½ lbs sirloin steak, cut into bite-sized cubes
1½ lbs baby potatoes, halved or quartered
4 tbsp olive oil, divided
4 tbsp butter
5–6 cloves garlic, minced
1 tsp paprika
1 tsp dried Italian herbs
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Heat 2 tbsp olive oil in a large skillet over medium heat.
Add the potatoes and season with salt, pepper, and paprika.
Cook 15 minutes, stirring occasionally, until golden and fork-tender.
Remove potatoes from the pan and set aside.
Season steak cubes with salt, pepper, and Italian herbs.
In the same skillet, add 1 tbsp oil and 2 tbsp butter.
Sear steak in a single layer (cook in batches if needed) 2–3 minutes per side until browned.
Avoid overcooking; steak should remain juicy.
Reduce heat to medium-low.
Add remaining butter and minced garlic, sauté 1 minute until fragrant.
Return potatoes to the pan and toss with steak and garlic butter.
Cook 1–2 more minutes to heat everything through.
