Instructions

  1. Gather and measure all ingredients before starting.

  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and nutmeg.

  3. In a separate bowl, whisk buttermilk, eggs, vanilla extract, and melted butter until smooth.

  4. Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.

  5. Let the batter rest for 10–15 minutes.

  6. Heat vegetable oil in a deep pot to 350°F (175°C).

  7. Drop spoonfuls of batter carefully into the hot oil.

  8. Fry for 2–3 minutes per side, until golden brown and puffed.

  9. Remove beignets with a slotted spoon and drain on paper towels.
