These Homemade McGriddle Muffins are a fun, homemade version of the famous fast-food McGriddle—fluffy pancake-style muffins baked around a warm sausage patty, egg, and melty cheese. They’re sweet, savory, filling, and perfect for meal prep because you can make a batch and reheat them all week.
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 cup milk
1 egg
2 tablespoons butter, melted
2 tablespoons maple syrup
6 sausage patties, cooked and flattened
6 eggs, scrambled or fried
6 slices American cheese
Sharp cheddar cheese (extra flavor)
Turkey sausage (lighter option)
Drizzle of hot honey (sweet-spicy twist)
Preheat oven to 350°F (175°C).
Grease a muffin tin very well (important to prevent sticking).
Make the batter:
In a bowl, whisk together flour, sugar, baking powder, and salt.
Add milk, egg, melted butter, and maple syrup. Stir until just combined (do not overmix).
Cook the filling:
Cook sausage patties until browned. Drain grease and flatten slightly.
Scramble or fry eggs (cook until just set).
Assemble the muffins:
Spoon a layer of batter into each muffin cup.
Add 1 sausage patty, a portion of egg, and ½ slice American cheese.
Cover with more batter until cups are just filled.
Bake:
