Sauce

  • 1/3 cup low-sodium soy sauce

  • 1/3 cup honey

  • 1/3 cup ketchup

  • 6 cloves garlic, minced

  • 1/2 teaspoon apple cider vinegar

  • 1 teaspoon fresh grated ginger

  • Pinch of crushed red pepper flakes (optional)

  • 2 tablespoons cornstarch

  • 2 tablespoons cold water

For Serving (optional)

  • Cooked rice

  • Chopped scallions

  • Sesame seeds

Instructions

  1. Place the chicken thighs in an even layer in the slow cooker.

  2. In a bowl, whisk together soy sauce, honey, ketchup, garlic, vinegar, ginger, and red pepper flakes.

  3. Pour the sauce over the chicken.

  4. Cover and cook:

    • High for 3½ hours, or

    • Low for 6–8 hours

  5. In a small bowl, mix cornstarch with cold water. Stir into the slow cooker.

  6. Cook on high for 15 more minutes until the sauce thickens.

  7. Leave chicken whole or shred with two forks.

  8. Serve over rice and top with scallions and sesame seeds if desired.
