2 pounds boneless, skinless chicken thighs
1/3 cup low-sodium soy sauce
1/3 cup honey
1/3 cup ketchup
6 cloves garlic, minced
1/2 teaspoon apple cider vinegar
1 teaspoon fresh grated ginger
Pinch of crushed red pepper flakes (optional)
2 tablespoons cornstarch
2 tablespoons cold water

Place the chicken thighs in an even layer in the slow cooker.
In a bowl, whisk together soy sauce, honey, ketchup, garlic, vinegar, ginger, and red pepper flakes.
Pour the sauce over the chicken.
Cover and cook:
High for 3½ hours, or
Low for 6–8 hours
In a small bowl, mix cornstarch with cold water. Stir into the slow cooker.
Cook on high for 15 more minutes until the sauce thickens.
