Nonstick cooking spray
1½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon kosher salt
2 teaspoons ground cinnamon
¼ cup unsalted butter, melted
¼ cup granulated sugar
1 large egg
½ teaspoon vanilla extract
½ cup unsweetened applesauce
1½ cups finely diced apples (Honeycrisp or Gala, about 2 medium)
2 cups powdered sugar
⅓ cup + 2 tablespoons apple cider or apple juice
Preheat the Oven
Preheat oven to 400°F (200°C). Lightly grease a baking sheet with nonstick spray.
Mix Dry Ingredients
In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
Mix Wet Ingredients
In a large bowl, whisk melted butter and sugar until combined. Add egg, vanilla extract, and applesauce, whisking until smooth.
Combine Batter
Add the dry ingredients to the wet ingredients and stir just until combined. Gently fold in the diced apples.
Bake
Scoop about 1 tablespoon of batter per fritter and drop onto the prepared baking sheet, spacing them a few inches apart.
Bake for 10 minutes.
Prepare the Glaze
While the fritters bake, whisk powdered sugar and apple cider until smooth and pourable.
Broil & Glaze
Remove fritters from the oven and turn the broiler to high. Brush some glaze over the warm fritters, letting it drip down the sides.
Broil for 2–4 minutes, rotating the pan frequently, until the glaze bubbles and lightly caramelizes.
Finish & Set
Remove from oven and brush remaining glaze evenly over the tops. Let sit for 15 minutes to allow the glaze to set before serving.
Best apples: Honeycrisp or Gala hold their shape and provide natural sweetness.
Don’t overmix: Stir just until combined to keep the fritters soft and tender.
Watch the broiler: Glaze caramelizes quickly—rotate the pan and keep a close eye on it.
Extra flavor: Add a pinch of nutmeg or apple pie spice to the batter.
