All the cozy comfort of classic lasagna… in a warm, saucy bowl! This Lasagna Soup is hearty, family-friendly, and so much easier than layering a traditional lasagna. A simple one-pot weeknight dinner that’s rich in flavor and ready in under an hour!
1–2 tbsp olive oil
1 lb ground beef
1 large onion, diced
4 garlic cloves, minced
1 can (15 oz) diced tomatoes, undrained
1 can (15 oz) tomato sauce (or tomato puree)
⅓ cup tomato paste (half a 6 oz can)
4 cups chicken broth
1–2 cups water (as needed for consistency)
1 tbsp Italian seasoning
1 tsp sea salt, plus more to taste
Black pepper, to taste
8 oz bowtie pasta (or lasagna noodles broken into pieces)
½ cup ricotta cheese
½ cup shredded mozzarella cheese
¼ cup grated or shaved Parmesan
¼ cup chopped fresh parsley
1️⃣ Brown the Beef
Heat oil in a large soup pot over medium-high heat.
Add ground beef, onion, and garlic. Cook until beef is browned, stirring occasionally. Drain excess fat if needed.
2️⃣ Build the Base
Stir in diced tomatoes (with juices), tomato sauce, tomato paste, broth, Italian seasoning, salt, pepper, and pasta.
3️⃣ Cook the Pasta
Bring to a boil, then reduce to a simmer.
Cook 10–15 minutes, stirring often, until pasta is tender and soup thickens.
4️⃣ Adjust Consistency
Add water or extra broth in small amounts if the soup becomes too thick.
5️⃣ Serve & Garnish
Option A: Stir ricotta, mozzarella, and Parmesan into the entire soup once slightly cooled.
Option B: Add cheeses individually to each bowl (the most popular way!).
Finish with fresh parsley.
Swap beef for Italian sausage for extra flavor.
Use broken lasagna noodles for a more authentic look.
