  • 8 oz elbow macaroni

  • 2 cups sharp cheddar cheese, shredded

  • 2 cups whole milk

  • 4 tablespoons unsalted butter

  • 1 cup panko bread crumbs

Instructions

  • Cook the Pasta:
    Bring a large pot of salted water to a boil. Add the elbow macaroni and cook until al dente, about 7–8 minutes. Drain and set aside.

  • Make the Roux:
    In a saucepan over medium heat, melt the butter until bubbly. Whisk in the flour and cook for about 1 minute, until smooth and lightly golden.

  • Add the Milk:
    Slowly pour in the milk while whisking constantly. Continue cooking until the mixture thickens slightly and becomes smooth.

  • Add the Cheese:
    Remove the saucepan from heat and stir in the shredded cheddar cheese until fully melted and creamy.

  • Combine Pasta and Sauce:
    Add the cooked macaroni to the cheese sauce and stir until evenly coated.

  • Bake:
    Transfer the mac and cheese to a greased baking dish. Sprinkle the panko bread crumbs evenly on top.
    Bake at 350°F (175°C) for 20–25 minutes, or until the top is golden brown and crispy.

Notes

  • Shred your own cheese for a smoother sauce (pre-shredded cheese may not melt as well).

  • Don’t overcook the pasta—it will continue cooking in the oven.
