No-Bake Cookie Dough Bites: The Ultimate Easy Homemade Treat

These No-Bake Cookie Dough Bites are the ultimate quick and easy sweet treat. Made with soft edible cookie dough and coated in smooth melted chocolate, they deliver all the flavor of classic chocolate chip cookies — without turning on the oven.

Ingredients

Scale
  • 2 sticks (227 g) unsalted butter, softened

  • ¾ cup (150 g) white sugar

  • ¾ cup (165 g) light brown sugar

  • 2 cups (250 g) all-purpose flour*

  • ⅓ cup milk

  • 1 teaspoon salt

  • 1 teaspoon vanilla extract

  • ⅔ cup (120 g) mini chocolate chips

  • 200 g milk or dark chocolate (for coating)

*See safety tip below about heat-treating flour.

Instructions

Step 1: Make the Cookie Dough

  1. In a large mixing bowl, beat softened butter, white sugar, and brown sugar until light and fluffy.

  2. Add vanilla extract and mix well.

  3. Stir in flour and salt until a soft dough forms.

  4. Gradually add milk, mixing between additions until you reach your preferred texture.

  5. Fold in mini chocolate chips evenly throughout the dough.

Step 2: Shape the Bites

  • Scoop heaped teaspoons of dough.

  • Roll into small balls using your hands.

  • Place on a parchment-lined tray.

  • Refrigerate for about 15 minutes to firm up.

Step 3: Melt the Chocolate

  • Melt chocolate in the microwave in 30-second intervals, stirring each time until smooth.

  • For a shiny professional finish, temper the chocolate if desired.

Step 4: Coat the Cookie Dough

  1. Dip each chilled dough ball into melted chocolate using a fork or dipping tool.

  2. Let excess chocolate drip off.

  3. Place coated bites back onto parchment paper.

  4. Allow chocolate to set at room temperature or refrigerate until firm.

Notes

  • Use mini chocolate chips for easier rolling and better texture.

  • Chill dough well to prevent melting during dipping.

  • Add a teaspoon of coconut oil to melted chocolate for smoother coating.

  • Sprinkle sea salt or extra chips on top before chocolate sets.

  • Store bites in the fridge for the best texture.
