Potsticker Soup: A Comforting Delight

Potsticker Soup is a warm, cozy dish made with tender dumplings, fresh greens, and a savory broth. It’s quick to prepare, full of flavor, and perfect for busy weeknights or when you’re craving something comforting but light. With simple ingredients and minimal prep, this soup comes together in under 30 minutes.

Ingredients

Scale
  • 1 package (12 oz) pork or chicken dumplings (potstickers)

  • 4 cups low-sodium chicken broth

  • 1 tablespoon fresh ginger, grated

  • 3 garlic cloves, minced

  • 2 tablespoons soy sauce

  • 1 teaspoon sesame oil

  • 2 cups fresh spinach or bok choy

  • 2 green onions, chopped (for garnish)

Instructions

  • Gather and prep all ingredients for easy cooking.

  • In a large pot over medium heat, add a small splash of oil. Sauté the garlic and ginger for about 1 minute, until fragrant.

  • Pour in the chicken broth and bring to a gentle boil.

  • Add the dumplings and cook according to package directions, until tender and heated through.

  • Stir in the spinach or bok choy and soy sauce. Cook for 2–3 minutes, just until the greens are wilted.

  • Drizzle in the sesame oil and gently stir.

  • Ladle the soup into bowls and garnish with chopped green onions. Serve hot.

Notes

  • Use frozen dumplings straight from the freezer—no need to thaw.

  • Keep the broth gentle to prevent dumplings from breaking apart.

  • Add extras like sliced mushrooms, shredded carrots, or a splash of rice vinegar for extra flavor.

  • Make it spicy with chili oil or sriracha if you like heat.

  • Swap proteins easily by using shrimp or vegetable dumplings for variety.
