  • 1 package (12 oz) pork or chicken dumplings (potstickers)

  • 4 cups low-sodium chicken broth

  • 1 tablespoon fresh ginger, grated

  • 3 garlic cloves, minced

  • 2 cups fresh spinach or bok choy

  • 2 tablespoons soy sauce

  • 1 teaspoon sesame oil

  • 2 green onions, chopped (for garnish)

  • 1 teaspoon neutral oil (for sautéing)

Instructions

  1. Gather all ingredients to make cooking quick and easy.

  2. In a large pot over medium heat, add the neutral oil. Sauté the garlic and ginger for about 1 minute, until fragrant.

  3. Pour in the chicken broth and bring it to a gentle boil.

  4. Add the dumplings and cook according to package directions, usually 5–7 minutes, until tender and heated through.

  5. Stir in the spinach or bok choy and soy sauce. Cook for 2–3 minutes, just until the greens are wilted.

  6. Drizzle in the sesame oil and gently stir.

  7. Ladle the soup into bowls and garnish with chopped green onions. Serve hot.
