  • ½ yellow onion, diced

  • 2 tablespoons butter

  • 3 boneless, skinless chicken breasts, cut into 1-inch chunks

  • Salt and black pepper, to taste

  • 1 tablespoon garlic, minced

  • 1 tablespoon chicken bouillon

  • ½ teaspoon paprika

Creamy Sauce

  • 1 can condensed cream of mushroom soup

  • 1 can condensed cream of chicken soup

  • ½ cup milk (whole milk for extra creaminess)

For Serving

  • 12 oz egg noodles

Instructions

  • Bring a large pot of salted water to a boil. Cook egg noodles according to package instructions until al dente. Drain and set aside.

  • In a large skillet over medium-high heat, melt the butter. Add diced onion and sauté for 2–4 minutes until softened.

  • Add chicken pieces to the skillet. Season with chicken bouillon, paprika, salt, and black pepper. Stir well to coat and cook until chicken is nearly done.

  • Add frozen vegetables to the skillet. Stir and cook for about 5 minutes until vegetables are heated through and tender.

  • Stir in minced garlic and cook for 30–45 seconds, just until fragrant.

  • Add cream of mushroom soup, cream of chicken soup, and milk. Stir until smooth and combined. Reduce heat to low and let simmer for a few minutes until warmed through and slightly thickened.

  • Add cooked egg noodles to the skillet and stir until fully coated with the creamy sauce.

  • Serve hot and enjoy!

  • Rotisserie chicken shortcut: Use 3–4 cups shredded rotisserie chicken to save time. Add it with the vegetables.
