This Ground Beef Burrito Bowl is a fast, bold, and satisfying weeknight dinner. Juicy taco-seasoned beef meets fluffy rice, black beans, sweet corn, melty cheddar, and fresh salsa. It’s high in protein, easy to customize, and perfect for meal prep—no tortillas required.

Instructions

  1. Cook the Rice
    Cook rice according to package directions (stovetop or rice cooker). Keep hot and fluffy. For extra flavor, stir in a pinch of salt and a squeeze of lime after cooking.

  2. Brown & Season the Beef
    Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned (5–7 minutes). Drain excess fat.
    Stir in taco seasoning and ½ cup water. Simmer 3–5 minutes until saucy and glossy. Add 1–2 Tbsp water if needed.

  3. Prep the Toppings
    Rinse and drain black beans. Drain or thaw corn. Chop cilantro. Warm beans and corn briefly so they don’t cool the bowl.

  4. Assemble the Bowls
    Divide hot rice among bowls. Top with seasoned beef, black beans, and corn. Sprinkle with cheddar so it melts. Finish with salsa and cilantro. Add lime wedges or other garnishes if desired.
