Sheet Pan Pancakes (Blueberry + Fun Toppings)

If you love pancakes but hate standing at the stove flipping batch after batch, these Sheet Pan Pancakes are the perfect solution. You pour the batter into one pan, add toppings in sections, and bake—so everyone eats at the same time. They’re fluffy, golden, and super easy to customize!

Pancake Batter

  • 2 cups all-purpose flour

  • 1/4 cup brown sugar

  • 2 tablespoons granulated sugar

  • 1 tablespoon baking powder

  • 1/4 teaspoon kosher salt

  • 2 large eggs

  • 1 1/4 cups whole milk

  • 1/4 cup unsalted butter, melted

  • 1 teaspoon vanilla extract

Toppings (choose any / all)

  • 1 1/2 tablespoons seedless strawberry jam (slightly warmed)

  • 1/4 cup sliced strawberries

  • 1/4 cup chocolate chips

  • 1/4 cup blueberries

  • 1 1/2 tablespoons unsalted butter, melted

  • 1 tablespoon brown sugar

  • 1/4 teaspoon cinnamon

For Serving

  • Maple syrup

  • Butter

  • Powdered sugar (optional)

Instructions

  • Preheat oven to 425°F (220°C).

  • Spray a 9×13 rimmed sheet pan generously with nonstick spray (don’t forget corners and sides).

  • In a large bowl, whisk together:
    flour, brown sugar, granulated sugar, baking powder, and salt.

  • Add eggs, milk, melted butter, and vanilla. Whisk until smooth (do not overmix).

  • Pour batter into the pan. Tap the pan gently on the counter to level the batter.

  • Imagine the batter divided into 4 sections:

    • Strawberry Jam Swirl: dollop warm jam + swirl with toothpick, top with sliced strawberries

    • Blueberry: sprinkle blueberries

    • Chocolate Chip: sprinkle chocolate chips

    • Cinnamon Sugar Swirl: mix melted butter + brown sugar + cinnamon, dollop and swirl

  • Bake 15–18 minutes, until the center springs back and a toothpick comes out clean.

  • Cool 1–2 minutes, slice, and serve with syrup, butter, and/or powdered sugar.

Notes

  • Don’t overmix the batter (it keeps pancakes fluffy).

  • Use parchment paper if you want the easiest cleanup.

  • Tap the pan before baking so the batter spreads evenly.

  • Want extra fluffy pancakes? Let batter rest 5 minutes before baking.

  • For crispier edges: lightly brush edges with melted butter before baking.
