This Starbucks Cake Pop Recipe is a simple, budget-friendly copycat that tastes just like the classic vanilla cake pops from Starbucks. Made with boxed vanilla cake mix, a touch of frosting, and coated in pink candy melts, these cake pops are sweet, moist, and perfect for parties, holidays, or a fun baking project at home. Best of all, they’re easy to make and cost a fraction of the store-bought version.
1 box vanilla cake mix
Ingredients listed on cake mix box (usually eggs, oil, and water)
⅓ cup French vanilla frosting
1 bag (12 oz) light pink candy melts
White sprinkles
Lollipop sticks
Bake the cake
Prepare the cake according to package instructions. Beat cake mix with the required eggs, oil, and water. Pour into a greased 9×13-inch baking dish (or two 8×8-inch pans). Bake at 350°F (175°C) until a toothpick inserted in the center comes out clean.
Cool and crumble
Allow the cake to cool completely. Once cooled, crumble the cake into fine crumbs using a fork or your hands.
Mix with frosting
Add the frosting to the crumbled cake and mix until fully combined. Cover and freeze until chilled and firm.
Shape the cake pops
Roll the chilled mixture into evenly sized balls. Freeze again until very firm. Once frozen, gently re-roll to smooth the surface and place on a baking sheet.
Insert sticks
Melt a small amount of the candy melts. Dip the tip of each lollipop stick into the melted candy, then insert it into the center of a cake ball. Return to the freezer until set.
Coat the cake pops
Melt the remaining candy melts in the microwave or a double boiler. Dip each cake pop into the melted candy, tapping gently to remove excess. Decorate with sprinkles before the coating hardens.
Set and serve
Place cake pops upright in a styrofoam block or box and let them harden completely. Enjoy!
Make sure the cake is completely cool before crumbling to avoid a gummy texture.
Chilling the cake mixture makes shaping much easier and helps the cake pops hold their form.
Don’t add too much frosting—just enough to bind the crumbs together.
If candy melts are too thick, stir in a small amount of coconut oil or shortening.
Store finished cake pops in the refrigerator for up to 5 days.
