Ingredients

Scale

For the French Toast

  • 4 slices thick-cut bread (brioche or challah works best)

  • 2 large eggs

  • ½ cup milk or half-and-half

  • 1 teaspoon vanilla extract

  • ½ teaspoon cinnamon

  • Pinch of salt

  • Butter, for cooking

For the Filling

  • 2 breakfast sausage patties (or spicy sausage)

  • 2 large eggs

  • Salt and pepper, to taste

  • 2 slices cheddar or pepper jack cheese

Sweet & Spicy Finish

  • 12 teaspoons honey or maple syrup

  • Pinch of red pepper flakes or drizzle of hot honey (to taste)

Instructions

  • Prepare the French toast batter:
In a shallow bowl, whisk together eggs, milk, vanilla, cinnamon, and salt.

  • Cook the sausage:
In a skillet over medium heat, cook sausage patties until browned and cooked through. Remove and keep warm.

  • Scramble the eggs:
In the same skillet, lightly scramble the eggs with a pinch of salt and pepper. Set aside.

  • Cook the French toast:
Heat a clean skillet or griddle over medium heat and melt a little butter.
Dip each slice of bread into the egg mixture, coating both sides.
Cook for 2–3 minutes per side until golden brown.

  • Assemble the sandwiches:
Place a slice of French toast on a plate. Add sausage, scrambled eggs, and cheese.
Drizzle lightly with honey or maple syrup and sprinkle with red pepper flakes or hot honey.
Top with another slice of French toast.

  • Serve:
    Serve warm and enjoy immediately.

Notes

  • Use thick bread: Brioche or challah absorbs the custard without falling apart.

  • Don’t oversoak: A quick dip keeps the French toast fluffy, not soggy.

  • Adjust the heat: Use more or less spice depending on your tolerance.

  • Cheese swap: Pepper jack adds extra heat; mozzarella keeps it mild.

  • Make it crispy: Toast assembled sandwiches briefly in the skillet to melt cheese fully.
