4–6 medium Russet potatoes
1 lb lean ground beef
1 (1 oz) packet taco seasoning (plus water as directed on packet)
Shredded lettuce
Shredded cheddar cheese
Sour cream
Salsa
Guacamole
Sliced green onions
Bake the Potatoes
Preheat oven to 400°F (200°C). Wash and dry the potatoes. Poke a few holes in each potato with a fork, wrap in foil, and bake for 1 hour, or until tender. Carefully remove and let cool slightly.
Cook the Taco Beef
While the potatoes bake, brown ground beef in a large skillet over medium-high heat, breaking it up as it cooks. Drain excess grease.
Add taco seasoning and the amount of water called for on the packet. Bring to a boil, then reduce heat and simmer for 10 minutes, until thick and flavorful.
Assemble the Taco Potatoes
Remove foil from potatoes and cut a slit down the center. Fluff the inside with a fork.
Spoon taco beef into each potato and load up with your favorite toppings.
Serve
Serve immediately while hot and enjoy!
