  • 2 tablespoons olive oil

  • 8 large eggs

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ⅓ cup milk

  • 2 tablespoons salted butter

  • 1 (15 oz) can country sausage gravy

  • 2 cups shredded Colby Jack cheese

  • ½ cup real bacon pieces

Instructions

  • Preheat the oven to 425°F (220°C). Spray a 10×15-inch baking sheet with nonstick cooking spray.

  • Prepare the crust:
    Press the pizza dough evenly into the pan, stretching it to the edges. Brush the surface with olive oil and poke holes all over with a fork to prevent bubbling.

  • Par-bake the crust:
    Bake on the middle rack for 7 minutes, just until the crust begins to lightly brown. Remove from the oven.

  • Make the eggs:
    In a bowl, whisk together the eggs, salt, pepper, and milk for at least 2 minutes until fully combined.

  • Scramble gently:
    Heat a skillet over low to medium heat and melt the butter. Add the egg mixture and cook slowly, stirring gently, until the eggs are soft and fluffy. Remove from heat.

  • Assemble the pizza:
    Spread the sausage gravy evenly over the baked crust.
    Top with scrambled eggs, then sprinkle evenly with shredded cheese and bacon pieces.

  • Bake again:
    Return the pan to the oven and bake for 6–7 minutes, until the cheese is fully melted and everything is warmed through.

    Slice into 12 pieces and serve warm.
