These BBQ Chicken Grilled Cheese Sandwiches are cheesy, savory, and perfectly crispy. Garlicky buttered bread is pan-fried to golden perfection and stuffed with BBQ chicken and creamy Havarti cheese. They’re a perfect lunch, dinner, or game-day treat!
BBQ Chicken:
2 tablespoons olive oil
1 small red onion, thinly sliced
3 cloves garlic, minced
2 ½ cups shredded roasted chicken
½ teaspoon paprika
1 teaspoon Worcestershire sauce
1 cup BBQ sauce
12 slices Havarti cheese
Garlic Butter Bread:
¼ cup butter
2 cloves garlic, minced
2 teaspoons parsley, minced
12 slices sourdough bread or sturdy white bread
Prepare BBQ Chicken:
Heat olive oil in a large skillet over medium heat.
Cook onions until soft, about 2 minutes. Add garlic and cook 30 seconds until fragrant.
Add shredded chicken, paprika, Worcestershire sauce, and BBQ sauce. Stir and cook 2–3 minutes until heated through.
Make Garlic Butter:
In a small bowl, combine butter, garlic, and parsley. Microwave until melted.
Assemble Sandwiches:
Spread melted butter mixture on all 12 slices of bread.
On 6 slices, layer 1 slice of cheese, BBQ chicken mixture (dividing evenly), and another slice of cheese. Top with remaining 6 slices of bread, buttered side out.
Cook Sandwiches:
Heat a large non-stick skillet over medium heat.
Cook sandwiches until the bottom is golden, 3–5 minutes.
Flip, reduce heat to medium-low, and cook another 3–5 minutes until cheese is melted and bread is golden brown.
Cheese choice: Havarti melts beautifully, but you can also use mozzarella, cheddar, or a blend for variation.
