This crispy air fryer walleye is quick, simple, and full of flavor. A light parmesan–panko crust makes the fish golden and crunchy on the outside while staying tender inside. It’s perfect for a fast weeknight dinner or a healthy seafood meal with minimal cleanup.
1 lb walleye (2 fillets)
¼ cup panko breadcrumbs
¼ cup parmesan cheese (finely grated)
1 egg
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon paprika
¼ teaspoon salt
¼ teaspoon black pepper
1 lemon (for serving)
Thaw the walleye if frozen. Remove skin if needed and cut each fillet in half.
Pat the fillets completely dry with paper towels (this helps them get crispy).
Crack the egg into one shallow bowl and whisk.
In the second bowl, mix parmesan, panko, garlic powder, onion powder, paprika, salt, and pepper.
Dip each fillet into the egg, then coat evenly with the breadcrumb mixture.
Place fillets in the air fryer basket, leaving about 1 inch of space between pieces. Cook in batches if needed.
Air fry at 400°F (200°C) for 6 minutes, or until golden and crispy.
Remove and finish with fresh lemon juice. Serve immediately.
Dry fish = crispy fish: Don’t skip patting the fillets dry.
Finely grated parmesan sticks better and crisps more evenly.
Don’t overcrowd the air fryer—airflow is key.
