  • 3 tbsp olive oil

  • 1 ½ lbs boneless, skinless chicken breasts (4 breasts, pounded evenly)

  • 12 tsp 21 Salute Seasoning or poultry seasoning

  • 1 tsp kosher salt, or to taste

  • 1 tsp black pepper, or to taste

  • ½ cup white wine or chicken broth

  • 3 tbsp unsalted butter (add more if you want extra sauce)

  • 1 tbsp finely minced garlic

  • 2 tsp fresh parsley (optional, for garnish)

Instructions

  1. Sear the chicken:

    • Heat olive oil in a large skillet over medium-high heat.

    • Add chicken and season with 21 Salute, salt, and pepper.

    • Cook 5 minutes without touching or moving it to get a golden sear.

    • Flip and cook another 5 minutes, or until cooked through.

    • Transfer chicken to a plate to rest.

  2. Make the garlic butter sauce:

    • Add wine or broth to the skillet to deglaze, letting it bubble vigorously.

    • Add butter and stir until fully melted.

    • Add garlic and cook 1 minute, stirring constantly.

  3. Combine & serve:

    • Turn off the heat.

    • Return chicken to skillet and coat it in the garlic butter sauce.

    • Spoon extra sauce over each piece and garnish with parsley.

    • Serve immediately.

Notes

  • Pound the chicken evenly so it cooks quickly and stays juicy.

  • Don’t move the chicken while searing—this gives a better golden crust.

  • Use broth instead of wine if you want an alcohol-free version.

  • Add extra butter for a richer, silkier sauce.
