The Ultimate One Pot Marry Me Chicken Pasta: A Dish So Good, It’ll Spark a Proposal!

This One Pot Marry Me Chicken Pasta has everything you want in a dreamy dinner: tender seared chicken, perfectly cooked penne pasta, and a creamy sun-dried tomato sauce that tastes restaurant-quality — all made in just one pan. With bold flavors like garlic, Parmesan, and Italian herbs, this dish is so good… they might just propose after one bite!

Ingredients

  • 1 lb chicken breasts, thinly sliced

  • ¼ cup all-purpose flour

  • 2 tbsp olive oil

  • 2 tbsp butter

  • 4 cloves garlic, minced

  • ¼ tsp crushed red pepper flakes

  • 2 cups low-sodium chicken broth

  • 1 cup heavy cream

  • ¼ cup sun-dried tomatoes in oil, drained & julienned

  • ½ tsp Italian seasoning (no salt added)

  • 8 oz penne pasta, uncooked

  • 1 cup freshly shredded Parmesan cheese

  • Fresh basil (for serving)

  • Kosher salt & freshly ground black pepper, to taste

Instructions

1️⃣ Prep & Sear the Chicken
Pat chicken dry. Season with salt and pepper, then dredge in flour (shake off excess).
Heat olive oil in a sauté pan over medium-high heat. Sear chicken until golden on both sides — it will finish cooking later — then remove and set aside.

2️⃣ Build the Sauce
Reduce heat to medium. Add butter to the pan, then garlic and red pepper flakes. Sauté 1–2 minutes.
Stir in chicken broth, heavy cream, sun-dried tomatoes, Italian seasoning, and a pinch of salt and pepper.
Scrape up any browned bits — flavor!

3️⃣ Cook Pasta & Chicken Together
Once the sauce simmers, stir in uncooked penne. Place chicken back on top.
Cover and simmer over medium-low for 20 minutes, or until pasta is tender and chicken reaches 165°F (74°C).

4️⃣ Finish With Cheese
Remove chicken to rest.
Reduce heat to low and stir in Parmesan until the sauce becomes rich and silky.
Slice or dice chicken, return it to the pasta, and garnish with fresh basil.

Notes

  • Swap penne for rigatoni, fusilli, or bowties — all work great!

  • Want it spicy? Add extra red pepper flakes or a splash of Calabria chili paste.

  • Lighten it up by swapping half-and-half for heavy cream.

  • Stir in spinach right before serving for added veggies.
