  • 1 pound lean ground beef

  • 1 cup chunky salsa

  • 1 (10-oz) can red enchilada sauce

  • 8 (8-inch) tortillas (flour preferred, corn more traditional)

  • 2 cups shredded Mexican blend cheese (about 8 oz)

Instructions

1. Prep

  1. Preheat the oven to 350°F (175°C).

  2. Lightly spray a 9×13-inch baking dish with cooking spray.

2. Cook the Beef

  1. In a large skillet over medium-high heat, cook the ground beef until browned.

  2. Drain any excess fat.

  3. Return to medium-low heat and stir in the salsa.

  4. Heat through, then remove from the stove.

3. Assemble Enchiladas

  1. Pour half the enchilada sauce into the bottom of the baking dish.

  2. Warm the tortillas (microwave or stovetop).

  3. Add about 1/4 cup beef to each tortilla.

  4. Top with 1 heaping tablespoon of cheese.

  5. Roll tightly and place seam-side down in the baking dish.

4. Bake

  1. Pour the remaining enchilada sauce over the rolled tortillas.

  2. Sprinkle the rest of the cheese on top.

  3. Cover with foil and bake for 30–35 minutes, until hot and melty.

Notes

  • Add more flavor: Mix a little taco seasoning or chopped green chiles into the beef.

  • Make it creamy: Add a spoonful of sour cream or cream cheese to the beef mixture.

  • Prevent soggy enchiladas: Lightly toast the tortillas in a dry skillet before filling.

  • Use corn tortillas? Warm them well—they crack easily unless heated.
